No Bake Strawberry Pie - Recipe 2

Ingredients

  • 1 prepared pie shell or biscuit base pie crust
  • 250 grams strawberries
  • 3/4 cup sugar
  • 1 tablespoon gelatine
  • 1/2 cup hot water
  • 1 egg white
  • 1 cup whipped cream
  • Fresh strawberries or other garnish

Method
Place crushed stawberries in a mixing bowl. Add sugar and mix well. Dissolve gelatine in the hot water, stirring gently. Add to strawberries, and leave until half set. In a separate bowl, beat egg white until stiff and peaks form. Gently fold half set strawberries into the whipped cream. Pour into the pie shell and leave to set. Serve with fresh strawberries in season, and whipped cream.

Makes 6 to 8 servings.

Strawberry Flummery Pie - Recipe 3

Ingredients

  • 1 prepared pie shell or biscuit base pie crust
  • 1 pkt (100 grams) strawberry jelly
  • 1 1/2 cups boiling water
  • 1 cup double cream or thickened cream
  • Fresh strawberries or other garnish

Method
Dissolve jelly in boiling water. Refrigerate until it starts to thicken, but not set. Beat cream until stiff. Gently and slowly fold in the jelly, until fully blended. Fill the pie shell. Refrigerate until set. Serve with fresh strawberries if available, and whipped cream. Garnish with sliced strawberries.

Makes 6 to 8 servings

Variations for Strawberry Flummery Pie

  • Make as individual tartlets
  • Make in a long stemmed glass as a dessert. Top with fresh sliced strawberries
