Strawberry Jam - Recipe

When strawberries are in season and plentiful, it’s time to make strawberry jam, so you can have them all year round.

Strawberry Jam - Ingredients

  • 5 cups strawberries
  • 5 cups of sugar
  • Juice of 1/4-1/2 lemon (or to taste)

Method

Wash and remove stems from strawberries.
Leave whole, slice or crush depending on texture desired.
Crush strawberries completely.
Place alternating layers of strawberries and sugar in a shallow dish.
Leave to stand overnight.

Boil the strained off syrup, till it starts to thicken.
Then add the stawberries, and stir constantly.
Continue to boil for approx 20 minutes, or until thick.

If desired, add lemon juice just before the strawberry jam is ready.
Allow to cool.
When cold, place in sterilised jars and seal airtight.

Makes 2 1/2 cups of strawberry jam

Strawberry Jam Making Variation

As jam making depends a lot on the type of available strawberries, their consistency, mositure content, you use, you might like to experiment with equal but lesser quantities of the ingredients. If you find it does not set you can also buy sachets of pectin, which need to be mixed with water. Once you have perfected making strawberry jam the way you like it, you can also make larger quantities for storing or for gifts.

Strawberry Jam Making Tip

Whatever quanities you use, remember to keep them roughly equal e.g. 6 pounds of strawberries and 6 pounds of sugar.

Time to Host a Tea Party

This strawberry jam recipe is the perfect accompaniment to scones and cream for an Afternoon Tea Party. Host a Tennis or Wimbledon Tea Party, a Strawberry Tea Party, or a red theme Red Hat Society Tea Party. Of course, you don’t have to have a party to enjoy strawberry jam. Strawberry jam is great on fresh bread too, and makes a good base for sauces or icecream topping.
