Prawns With Cream & Brandy Sauce - Tea Party Recipe
This prawns with cream and brandy sauce recipe is deceptively simple to make.
It looks like a restaurant course - a tea party recipe favorite, or use it as an entree. Minimum preparation and great results is an ideal combination for chefs on the run.
Ingredients
- 6 ounces prawns, cooked & shelled
- 1 1/2 ounces butter
- 1/8 pint thickened cream
- 2 tbspns brandy
- pepper
- lemon juice
- nutmeg
- parsley, chopped
Method
- Season prawns with pepper, nutmeg and lemon juice
- Saute prawns in butter
- Warm brandy in a metal soup ladle
- Pour flaming brandy over prawns
- Shake pan to help the flames spread over prawns
- When flames subside, turn down heat to low
- Leave for two minutes
- Turn up heat and add cream
- When cream starts to thicken, stir it through prawns
- Stir in chopped parsley
Serve on individual plates or scallop shaped shells on top of a small bed of rice. Garnish with parsely, chives or spring onions.
Serves 2-3 people
Variation
Use sherry instead of brandy
