Pecan Pie - Recipe

This Pecan Pie recipe uses store bought shortcrust pastry, so it’s extra quick.

Ingredients

  • 1 1/2 sheets frozen shortcrust pastry
  • 2 eggs
  • 2 tbspns plain flour
  • 1 cup brown sugar
  • 1/4 cup golden syrup (cane sugar)
  • 2-3 tbspns butter
  • 1 tspsn vanilla essence (optional)
  • 1-2 cups pecan nuts

Method
Butter a shallow pie dish or line it with greaseproof paper. Place the shortcrust pastry in the dish, and press it into place if neccessary. Cover it with uncooked rice to weigh it down, and bake it “blind” at 180 C for approx 10 minutes. Remove the rice and cook a further 5 minutes.

Combine melted butter with all the other ingredients, including the pecan nuts. Gently pour the pecan mixture into the pie dish. Bake for a further 15 -20 minutes. Check if filling is set at about 15 minutes. Serve warm or cool, with cream or icecream. Sprinkle the pecan nut pie with icing sugar if desired.
