Peach Slice - Recipe

This Peach Slice recipe is light and delicious, and is made with sour cream. We give you an (almost) no guilt variation too. You can substitute any other fruit too.

Ingredients

  • 125 g butter

  • 1 tbspn golden syrup
  • 1/2 cup sugar
  • 3/4 cup dessicated coconut
  • 1 cup self raising flour
  • 1 can sliced peaches in syrup
  • 250 ml sour cream
  • 1/4 cup icing sugar
  • 1 tspn vanilla essence

Method

Base
Melt butter and golden syrup in small saucepan over low heat. In small mxing bowl, coming sugar, flour and coconut. Pour melted butter and syrup over dry ingredients and mix well.

Spread over base of greased lamington tin. Alternatively, line lamington tin with baking paper. Cook in moderate oven 10-15 minutes or until golden brown. Cool a little.

Topping
Drain peaches and arrange on cooled base. Mix sour cream, sugar and vanilla well. Spread over peaches. Bake further 15 minutes till top starts to turn golden at edges. Remove from oven. Serve warm, or cool in fridge for later.

Variation
Use sour light cream for an (almost) guilt free version.
