Lemon Sponge Pudding - Recipe
Lemon Sponge Pudding is a self saucing sponge pudding with a lemon sauce. Serve it warm with cream or custard.

Ingredients
- 2/3 cup sugar
- 1/4 cup plain flour
- 45 g melted butter
- 1/4 cup lemon juice
- 2 tspns lemon rind - finely grated
- 3 eggs - room temperature
- 1 1/2 cups milk
- icing sugar (optional)
Method
Mix sugar and flour in a bowl. Add melted butter, lemon juice and finely grated lemon. Mix well. Whisk egg yolks and milk till a light froth. Separate egg yolks from whites. Beat eggs whites until soft peaks form. Fold gently into the batter with a spatula. Pour batter into a large greased cake tin or ovenproof dish. Bake in a moderately hot oven (190 degrees C) for 35 to 40 minutes.
Serve warm with cream or custard. Serves 6.
Tips
The cake pan or ovenproof dish needs to be large enough to allow for the sauce, as in a small pan, it may overflow.
