Lemon Curd - Recipe
This Lemon Curd Recipe blends the tartness of lemon with sweetness. Make this well known favourite at Afternoon Tea, Tea Parties or for your family. Spread it on scones, muffins or crumpets, or use it as a filling.
Ingredients
- 1 lb sugar (superfine)
- 6 eggs
- 4 ounces butter (not a butter substitute)
- grated rind and juice of 6 good quality lemons
Method
- Clean the lemon skins, before juicing
- Use a zester to remove the lemon zest
- Melt the butter gently in double saucepan
- Lightly beat the eggs
- Stir in the other ingredients one at a time
- Continue stirring on a low heat, until the consistency of honey
- Do not allow the lemon curd to come to the boil
- Keep at an even temperature througout
- Allow to cool a little
- Pour lemon curd into sterilised pots or jars
- When completely cooled, seal
