Gingered Coffee Meringues
When I reviewed The Coffee Cookbook, the recipe which I kept coming back to was Gingered Coffee Meringues.
Of this recipe, Catherine Atkinson says “What could be more enticing than to break through the coating of a crisp meringue to reveal just melting coffee ice cream on a ginger sponge?”
She offers a simple coffee dessert idea with a spectacular result.
My Simplified Gingered Coffee Meringues Version
1. Cut rounds from a bought ginger cake
2. Top these with a scoop of icecream
3. Add meringue mixed with preserved ginger
4. Bake for 3 - 4 minutes
In the actual recipe, the meringue is piped in a spiral on top of the icecream. Atkinson offers clear full colour step by step photos throughout The Coffee Cookbook.
