Double Decker Cherry Brie
This Double Decker Cherry Brie recipe makes a great appetizer, entree or gift for a hostess.

We’ve included this as an Entree in our Very Cherry Christmas Tea Party Menu. But, it would make a great meal appetizer or party food, any time of year.
Ingredients
- 1 (8 ounce) wedge Brie cheese
- 1/4 cup roughly chopped drained tinned dark cherries
- 1 tablespoon finely chopped sweet preserved ginger to taste
- 1/2 teaspoon dried mixed herbs
Method
To make the cherry brie, first cut Brie in half straight from the refrigerator, so that you have 2 circles. Leave it to soften at room temperature. When very soft, carefully remove the cheese from its outer “case”.
Combine softened brie, cherries, preserved ginger and mixed herbs in a small bowl. Mix well. Fill each half with the mixture, and return them to the refrigerator, side by side.
When cooled, press the two halves firmly together, so that you have your double decker cherry brie stack. Keeping them carefully together as a double decker arrangement, tightly wrap the brie with plastic wrap. Slice into wedges while still firm with a sharp knife. Allow to soften a little before serving. Serve with crackers and fruit.
Alternatively, leave the double decker brie stack whole. For maximum effect, surround the stack with fresh cherries, other fresh fruit, or canned fruit.

- Tinned Pineapple
- Butter
- Pecan Nuts
- Macadamia Nuts
- Almonds
- Mixed Herbs
- Capsicum (Different colours)
- Cracked Black Pepper
- Add another layer to make a triple decker cherry brie stack
- Make a number of double decker cherry brie stacks with different flavours
- 1 tablespoon French Onion Soup Mix Powder
Tips for Double Decker Cherry Brie
- Make a few days before. Seal in plastic wrap, and refrigerate
- Dress up the Double Decker Cherry Brie according to the occasion
- Add a sprig of Christmas greenery or a Thanksgiving Accent, on top of, and around the cherry brie
