“Capuchin” referred to the cowled hood they wore. The Italians named the espresso coffee with a “hood” of foam, after the monks, because the coffee was the colour of their robes.

Where does the word “TIPS” come from?
Tipping originated in the days of the English Coffee Houses. These were at their heyday from about 1650 - the late 1700’s. These were also known as Penny Universities, as the cost of entry was one penny.
The Coffee Houses in England were noisy and crowded. Customers soon found a way to get faster service. They put extra pennies into a tin marked
“To Insure Prompt Service”. This was later shortened to “Tips”.
