Coconut Macaroons Recipes
Coconut Macaroons are a classic tea party recipe made without flour. They are a light treat for Afternoon Tea or Tea Parties.

Cherry Coconut Macaroons - Recipe 2 - Ingredients
- 2 egg whites
- 1 1/2 cups shredded coconut
- 1 cup icing sugar
- 5-6 drops vanilla essence
- 6 glaced cherries, chooped
- Whole glaced cherries
Method
For the Cherry Coconut Macaroons, chop glaced cherries. Beat egg whites until soft peaks form. Gradually add sugar. Continue beating until thickened. Add vanila essence and shredded coconut. Fold in chopped glaced cherries.
Using a teaspoon, spoon one teaspooon onto a greased tray for each Cherry Coconut Macaroon. Bake at 140 degrees Celsius for 15 -20 minutes.
Press a whole or halved glaced cherry gently into the top of each Cherry Coconut Macaroon while still warm, if desired.
