Christmas Gingerbread Men Recipe

Christmas time means gingerbread houses, gingerbread men and gingerbread Christmas tree decorations.

The kids can help with this recipe. Grab the gingerbread cutters, and let’s get started.

Ingredients - Christmas Gingergread Men

  • 1/4 cup (90 grams) golden syrup
  • 1/2 cup brown sugar
  • 3 teaspoons ground ginger
  • 1 teaspoon bicarbonate of soda
  • 2 1/2 tablespoons golden syrup
  • 1 egg yolk. lightly beaten
  • 125 grams (4 ounces) butter
  • 2 1/2 cups plain flour
  • glaced cherries
  • sultanas
  • Prepared Icing

Method

Cream butter and sugar together. Add egg yolk. Mix well. Gradually add sifted flour, bicarbonate of soda and ginger, then the golden syrup. Mix to a dough. Knead lightly. Roll out dough. Cut out Christmas gingerbread man shapes with a cutter or cut around paper templates. Place cut out Christmas gingerbread men on a greased cookie tray. Bake in a moderate oven (approx 350 degrees F) for about 10 minutes. Allow to cool, then add decorations with icing and sultanas and cherries.


KIDS IN THE KITCHEN
This is meant to be fun and a shared experience. Don’t dwell too much on perfection with shape cutting or artistic icing work. Very young children can just add the eyes and buttons, using the sultanas, currants or cherries.

Variations & Tips

  • If you don’t have gingerbread cutters, cut the shape of the gingerbread man from paper or light card. Lay the template on top of the gingerbread man dough and cut around it.
  • Use edible paint instead of icing.
  • Decorate as e.g. gingerbread men, women, children, babies, clowns or even a family member. Keeping it fun is the key.
