Chocolate Madeleine Cakes - Recipe
Chocolate Madeleines are a variation of the traditional Madeline Cakes or Biscuits.
Ingredients
- 125 grams butter (room temperature)
- 1/2 cup caster or superfine sugar
- 2 eggs
- 1 teaspoon finely grated lemon rind
- 150 grams cooking chocolate
- 1 tblspn brandy (optional)
- 1 1/4 cups plain flour
- 1/2 tspn baking powder
- icing sugar
Method
Cream butter and sugar together. Add 1 egg and beat well. Repeat with second egg. Mix in lemon rind and brandy (optional). Mix in the cooled melted chocolate. Fold in sifted flour and baking powder, and combine. Spoon into greased moulds in a Madeleine cake pan. Bake in a moderatlely hot oven (180 -190 degreesC) for approx 15 minutes. Cool on a wire rack. When completely cooled, dust with icing sugar.
Makes about 20 Chocolate Madeleine Cakes.
Tips
The icing sugar makes a soft contrast with the chocolate colour.
Madeleines need to be made in a special Madeleine Cake Pan, to make the right size, shape, and most importantly, the scallop pattern. These pans are readily available at Kitchenware stores or through Amazon.
