Chocolate Cherry Log Cake - Recipe
Chocolate Cherry Log Cake is made with a light chocolate sponge, and filled with cream and cherries. Add rum or other flavourings if you like. Also check out our other cherry recipes.
Chocolate Cherry Log Cake Ingredients
- 3 eggs
- 3/4 cup sugar
- 1/3 cup plain flour
- 1/2 tspn baking powder or bicarbonate of soda
- 1/4 cup cocoa
- Icing sugar or caster (superfine) sugar
- 1 tin drained pitted dark cherries
- 2 tablespoons rum or coffee liqueur(optional)
- 1/2 teaspoon vanilla essence (optional)
Chocolate Cherry Log Cake Method
Beat egg whites until stiff peaks form. Slowly beat in sugar. In a separate bowl, beat egg yolks with vanilla. Fold this mixture into the egg white mix. Sift dry ingredients and fold them into the cake mixture. Bake in a Swiss Roll tin for approx 12 minutes at 375 degrees F.
When cooked, turn it out immediately onto a damp tea towel, lightly dusted with icing sugar or caster sugar. Roll carefully into a log shape. Leave till cold. Gently unroll.
Add drained cherries along one end of the chocolate cherry log cake. Add vanilla, rum or coffee liqueur to the cream if desired. Spread cream over whole sponge. Gently roll up the log cake, starting at the end with the cherries.
