Chocolate Cherry Icecream Baubles - Recipe

Introduction

Chocolate Cherry Icecream Baubles are featured on our
Very Cherry Christmas Tea Party Menu, but also make a great dessert
all year round.

Ingredients

  • 1 jar maraschino cherries or 2 pkts glazed cherries
  • 2-2 1/2 cups vanilla or macadamia nut icecream
  • cherry stems (allow one for each chocolate cherry icecream bauble)
  • 1 bottle of magic shell chocolate topping (type that hardens on icecream)

Method

Drain maraschino cherries well. Chop maraschino cherries or glazed cherries roughly. Mix with softened (but not melted) icecream. Return to freezer to harden a little more. Tip the magic shell chocolate topping into a bowl. Use a melon baller to scoop cherry size balls of cherry icecream. For larger balls, use a small icecream scoop.

With a skewer holding the cherry icecream ball, insert the cherry stem. Spoon the magic shell chocolate toppping over the cherry icecream bauble. Use a fork to gently push the cherry chocolate icecream bauble off the skewer onto a plate or waxed sheet. Repeat until all chocolate cherry icecream baubles are done. Return to freezer until ready to serve.

Vary quantities of all ingredients to suit the number and size of chocolate cherry icecream baubles you want.

Variations

For individual size servings, use a regular or large icecream scoop. Top the chocolate icecream cherry bauble with a small green decoration. Encircle it with a garnish of cherry coulis, cream or custard.

or

For bite size servings, use whole tinned dark cherries. Drain well. Mold softened vanilla or macadamia nut icecream around the whole cherry. Follow rest of recipe instructions, to make the chocolate cherry icecream baubles.
