Blueberry Muffins - Recipes
Blueberries make a great tea party food, whether fresh or in baking. Blueberry Muffins are a tried and true Afternoon Tea recipe, with friends or family.
For a dainty bite sized tea time treat, use our Blueberry Mini Muffins tea party recipe. Use the same recipe to make Large Blueberry Muffins.

Blueberry Muffins Recipe 2 - Mini Blueberry Muffins
Ingredients
- 2 cups self raising flour
- 1/2 cup sugar
- 3/4 milk
- 1 large egg
- 1/4 cup butter
- 1 cup fresh or frozen blueberries
Method
Preheat oven to 425 degrees. Lightly grease a mini muffin pan. Combine the flour and sugar in a mixing bowl . Make a well in the center. Add milk, egg and butter and gently mix, until a soft dough is formed. Fold in berries. Spoon into prepared muffin pan. Bake until tops are golden and cooked through.(approx 12 - 15 minutes).
Makes 24 mini muffins.
Variation for Large Blueberry Muffins
Use the mini blueberry muffin recipe to make 12 large blueberry muffins. Bake for 15-18 minutes at 425 degrees, until tops of the large blueberry muffins are golden.
