Australian Pumpkin Scones - Recipe

These Australian pumpkin scones would be perfect for an Australian theme Tea Party. You could also serve them at a Halloween Tea Party or perhaps for a Thanksgiving Afternoon Tea or Tea Party.

Ingredients

  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tbs butter
  • 1 egg
  • 1 cup mashed pumpkin
  • 2 to 2 1/2 cups self raising flour

Method

  • Using an electric mixer, beat together butter, sugar and salt
  • Add egg, then pumpkin
  • Fold in sifted flour by hand
  • Turn onto a floured board and cut
  • Place on a heated floured tray
  • Cook in a very hot oven 425-450 degrees F (225-250 degrees C)
  • Leave to cook for 15 to 20 minutes

When Cooked

  • Take from oven and turn out on a wire rack
  • Split in half while still warm
  • Put strawberry jam on each half
  • Top each half with cream
  • Serve warm with tea or coffee

Tips

  • Scones can be frozen and reheated in the microwave
  • To freshen day old scones, reheat for a few minutes
  • Serve reheated scones immediately
