Apple Slice - Recipe
This easy Apple Slice recipe has a light sour cream topping which complements the sweetness of the fruit beautifully. It can be also be made with any other fruit, either fresh or canned.
Apple Slice - Ingredients
- 1 packet vanilla cake mix
- 1 cup coconut
- 125 g butter (softened)
- 1 can pie apples (450 g)
- 1 carton sour cream (250 g)
- 1/3 cup icing sugar
- 1 tspn vanilla essence
Method - Apple Slice Base
Mix vanilla cake mix and coconut in a bowl. Add softened butter till well mixed. Press mixture into a well greased rectangular cooking tray. Bake for 15-20 minutes in a moderate oven. Stand aside to cool for a few minutes.
Method - Apple Slice Topping
Spread pie apples evenly over the base. Mix sour cream, icing sugar and vanilla essence well. Spread gently and evenly over the pie apples. Bake for 20-25 minutes in a moderate oven until the edges start to brown. Stand aside to cool for a few minutes.
Apple Slice Variations & Tips
- Use any other fruit instead of pie apples
- Use an oatmeal biscuit (cookie) base
- Use sour light cream for a low fat version
- If using canned fruit in a syrup, drain the fruit well before using.
